Choc Honeycomb Protein Banana Bread

INGREDIENTS
Dry:- 75g Oat flour
- 90g Maxine's Burn Chocolate Honeycomb protein Powder
- 2.5g Baking powder
- 2.5g Baking soda
- 10g Cacao Powder
- 1tsp Cinnamon
- 3 large free range eggs
- 30mls Maple Syrup (sugar free)
- 1/2tsp Vanilla essence
- 230g Over ripe bananas, mashed
- 100g Light cream cheese
- 160g YoPro vanilla yoghurt
- 1/2tsp Vanilla essence
- 10g Walnuts, crushed
- cinnamon
INSTRUCTIONS
1. Preheat the oven to 180 degrees and line a loaf tin with baking paper. 2. Blend oats into a flour (using your blender) and add to bowl with dry ingredients - protein powder, baking powder, baking soda, cacao powder and cinnamon. 3. Add wet ingredients - eggs, maple syrup, vanilla extract and bananas then combine well. 4. Pour the mixture into the tin and smooth with a spatula. 5. Pop in the oven and bake for 20 minutes or until a skewer inserted into the centre of the cake comes out clean. 6. Remove from the oven and allow to cool To make the icing:- Beat (using an electric beater) the cream cheese, yoghurt and vanilla essence until nice and creamy.
- Spread the icing over the cooled bread, sprinkle with crushed walnuts and sprinkle with cinnamon.
