ALMOST VEGAN Protein choc- chip cookies!

Been a hot minute since I last baked... but safe to say I haven’t lost my touch ALMOST VEGAN protein choc- chip cookies!
I say they’re ‘almost’ vegan as I used an egg- I much prefer the taste/ texture/ macros of egg as opposed to egg replacement- plus I didn’t have anything suitable to replace them... BUT I did use @maxinesburn vanilla plant protein and can I just say... WOW!
Overall verdict- soft, moist and DELICIOUS... they’re super sweet so I honestly don’t think the little bit of brown sugar was even needed, but I’ll leave that up to personal preference!
