ALMOST VEGAN Protein choc- chip cookies!

Been a hot minute since I last baked... but safe to say I haven’t lost my touch ALMOST VEGAN protein choc- chip cookies! I say they’re ‘almost’ vegan as I used an egg- I much prefer the taste/ texture/ macros of egg as opposed to egg replacement- plus I didn’t have anything suitable to replace them... BUT I did use @maxinesburn vanilla plant protein and can I just say... WOW! Overall verdict- soft, moist and DELICIOUS... they’re super sweet so I honestly don’t think the little bit of brown sugar was even needed, but I’ll leave that up to personal preference! PROTEIN 6.6G | CARBS 6.4G | FAT 4.5G Calories 93 (per cookie)

INGREDIENTS

  • 90g Maxine's Burn Plant Protein Powder
  • 3 tbsp self raising flour
  • 1/2 tsp baking soda
  • sprinkle of salt
  • 25g soft brown sugar
  • 75g chocolate (I used 70% lindt but I also love @sweetwilliamchocolate choc chips)
  • 50g melted dairy free light margarine (I used nuttelex lite!)
  • 1 egg
  • 1/3 cup almond milk

INSTRUCTIONS

  1. Combine the protein powder, flour, baking soda, salt, brown sugar and chopped up chocolate in a bowl
  2. Add in melted butter (make sure it isn’t too hot- only slightly warm)
  3. Beat the egg and add it to the mix
  4. Add vanilla extract
  5. Give it a mix around until all combined- this is when you will add the milk and depending on your mixture it’ll be around 1/3- 1/2 a cup (I used 1/3 of a cup)
  6. Spoon into trays and cook at 180 for 10- 15 mins!
NOTE: don’t add all the milk at once, the mixture may seem dry but ensure you’ve mixed it around adequately first!!!!
