Summer Açaí Bowl

Summer and fruit are a combo like no other. Summer and açaí bowls however, take it to the next level. If you’re not amongst the hype yet, I’m not sure where you’ve been. Before I launch into how delicious they are, a little bit about how these bowls are ridiculously good for you. Açaí berries are high in a little something called anthocyanin. Basically, they’re a form of antioxidant which is said to have the ability to lower cholesterol levels in the blood stream! There’s plenty more benefits, but that’s the one açaí is most famous for.

So now, the fun part. What I love most about the açaí bowls is going nuts on fruity toppings. Think big. Go large. I’m talking, banana, blueberries, apple, strawberries, mango, coconut, granola, bee pollen, chia seeds – you seriously can’t go wrong. Give it a go on a hot Summers’ day and you won’t regret it!

SUMMER AÇAÍ BOWLS

PREP TIME: 2m | TOTAL TIME: 5m
YIELD: 1 bowl

Ingredients

  • scoop Maxine’s Burn Vanilla protein powder
  • 1 banana, frozen
  • 1/2 cup frozen raspberries
  • 1/2 cup frozen blueberries
  • 1/4 cup coconut water
  • 1 tbsp açaí powder

Toppings

  • Fresh fruit (bananas, strawberries, raspberries, blueberries, mango)
  • Bee pollen
  • Granola
  • Unsweetened coconut flakes
  • Dried goji berries
  • Chia seeds

Instructions

  1. Add all ingredients except coconut water to a high speed blender, blend until the fruit is blended but still quite thick, adding coconut water little bit as a time. More or less coconut water may be required.
  2. Pour into a bowl, and add toppings, whatever you feel like!
  3. Enjoy!
